Recipe Instructions
1 1/2 cups wholemeal or whole wheat spelt flour (can substitute with whole wheat or gluten-free flour)
1/2 cup golden flax seeds
1/2 tsp celtic sea salt
1 tsp baking powder
Optional: 1 tbsp nutritional yeast
1/2 cup almond milk (or any plant-based milk of choice)
Additional flour for rolling
In a mixing bowl, combine the wholemeal or whole wheat spelt flour, golden flax seeds, Celtic sea salt, baking powder, and nutritional yeast (if using). Mix well to combine the dry ingredients.
Add the almond milk to the dry ingredients and mix until a dough forms. Knead lightly until all the flour is incorporated and the dough comes together.
Place the dough in the refrigerator for about 10 minutes to rest and cool down.
Preheat the oven to 175°C (350°F) and line a baking tray with parchment paper.
Take the rested dough out of the refrigerator and flatten it slightly. Sprinkle some additional flour on top to prevent sticking, then roll out the dough as thin and evenly as possible.
Cut the rolled-out dough into desired cracker shapes using a pizza cutter or a knife. Optionally, sprinkle some sea salt on top and gently roll the rolling pin over the dough to make the salt stick.
Transfer the cut-out crackers onto the prepared baking tray. Bake in the preheated oven for approximately 25 minutes or until golden brown and crispy. Keep an eye on them as baking time may vary.
Once baked, remove the crackers from the oven and allow them to cool completely on the baking tray. They will become crispier as they cool.
Break the cooled crackers into individual pieces along the scored lines. Store in an airtight container for freshness.
