Recipe Instructions
Makes 4 - 6 patties
4 cups sliced mushrooms
400g tin of brown lentils (drained)
2 tbsp (40g) tapioca flour
1/4 cup (70g) oats
1 tsp (5g) onion powder
1 tsp (5g) garlic powder
1 tsp (5g) whole fennel seeds
1 tbsp (20g) mixed Italian herbs
1 tsp (5g) ground sage
1 tsp (5g) paprika
1 tbsp (20g) tomato paste
salt and pepper to taste ( I used 1 tsp course celtic sea salt and 1/4tsp white pepper)
Heat a non-stick frying pan over medium heat. Add the sliced mushrooms to the pan and cook them until they release their moisture and become golden brown. Set aside to cool.
In a food processor, combine the cooked mushrooms, drained lentils, tapioca flour, oats, onion powder, garlic powder, whole fennel seeds, mixed Italian herbs, ground sage, paprika, tomato paste, salt, and pepper.
Pulse the ingredients together in the food processor until well combined and the mixture reaches a desired consistency. Be careful not to overprocess; it should have some texture.
Using your hands, form the mixture into approximately 6 burger patties.
Place the burger patties onto a baking sheet lined with parchment paper.
Preheat the oven to 180°C (350°F) and bake the burger patties for approximately 25-30 minutes, or until they are firm and golden brown (turning over half way through).
Once cooked, remove the burger patties from the oven and allow them to cool slightly before serving.
Serve the vegan mushroom lentil burgers on buns with your favorite toppings such as lettuce, tomato, onion, and condiments.
