Recipe Instructions
Makes 1 thick crust pizza OR 2 thin crispy base pizzas
2 cups flour (any you like)
1 tsp baking powder
1 tsp dry instant yeast
1 tsp coarse celtic sea salt
1 cup water (you may need to add a little more water to get a very thick batter consistency)
Topping Suggestions: Tomato paste, hummus, olives, falafels, mushrooms, tomatoes, fresh herbs, spinach, pre-cooked potatoes, red peppers, diced cucumbers, dried herbs etc
Place all of the ingredients in a non-stick frying pan (mine is 20cm/11in).
Stir gently with a rubber spatula or back of a wooden spoon.
Flatten mixture out evenly in the pan to form your pizza base. It will be like a very thick batter.
Add toppings, starting with tomato paste.
Cover the pan with a lid, making sure that it is tightly closed for 5 minutes on medium to high heat.
Open vents or tilt lid slightly so a little bit of air and moisture can escape. Continue to cook on medium for another 15 minutes.
Take off heat. Remove lid. Gently remove pizza from pan and serve hot. I like to serve on a wooden board as it helps keep the base nice and crispy.
