Today, I'm sharing a recipe for Caramel Coconut Baked Vegan Donuts that will delight your taste buds. To make these delicious treats, you'll need the following ingredients:
1 ½ cups of whole wheat flour
2 teaspoons of baking powder
½ teaspoon of cinnamon
2 tablespoons of coconut sugar
½ cup of almond milk (or your preferred plant-based milk)
1 teaspoon of apple cider vinegar
1 teaspoon of vanilla extract
¾ cup of coconut milk
¼ cup of maple syrup
Preheat your oven to 180 degrees Celsius (360 degrees Fahrenheit).
In a mixing bowl, combine the whole wheat flour, baking powder, cinnamon, and coconut sugar. Mix well to ensure all the dry ingredients are blended together.
In a separate bowl, combine the almond milk, apple cider vinegar, vanilla extract, coconut milk, and maple syrup. Stir gently with a silicon spatula until well mixed.
Carefully pour the liquid mixture into the dry ingredients. Stir gently to combine, being careful not to overmix. The goal is to keep the batter light and aerated.
Grease a small donut tin or use a non-stick variety. Spoon the batter into the donut holes, filling them about 3/4 of the way up.
Place the donut tin in the preheated oven and bake for approximately 12 minutes until the donuts are slightly browned on top.
While the donuts are baking, you can prepare the toppings.
For a healthier version, we'll make a caramel using dates. In a blender, blend pitted Medjool dates with 2 tablespoons of water until smooth and creamy.
Add 1 teaspoon of lemon juice and 1/4 teaspoon of coarse Celtic sea salt to the date caramel. Blend again until well combined.
Transfer the date caramel to a flat bowl.
In another bowl, prepare 1/4 to 1/2 cup of shredded coconut or desiccated coconut for coating the donuts.
Once the donuts are baked, allow them to cool for a couple of minutes. Use a rubber spatula to gently lift them from the tin, then let them cool further on a tea towel or cooling rack.
Dip each cooled donut into the date caramel, ensuring they are well coated. For a thicker caramel coating, use a spatula to spread the mixture evenly.
After dipping, sprinkle the caramel-coated donut with shredded coconut until it's nicely covered.
