Recipe Instructions
15 large medjool dates, pitted
1/2 cup desiccated coconut
2 teaspoons vanilla extract
2 tablespoons lemon juice
Zest of 1 lemon
1/4 teaspoon coarse Celtic sea salt
Extra desiccated coconut for rolling
In a food processor, add the pitted medjool dates, desiccated coconut, vanilla extract, lemon juice, lemon zest, and Celtic sea salt.
Pulse the ingredients until well combined.
Remove the blade from the food processor and give the mixture a quick mix to ensure everything is evenly combined.
Place some extra desiccated coconut in a container or on a plate.
Take small pieces of the mixture and roll them into small balls.
Optional: Roll the balls in the extra desiccated coconut to coat them.
Repeat the process until all the mixture is used.
Store the lemon and coconut bliss balls in the refrigerator or freezer.
I just had to share my delight with these Lemon and Coconut Bliss Balls! The combination of lemon, coconut, and dates was a burst of flavor, with a touch of Celtic sea salt that made it truly special.
I stored them in the refrigerator and enjoyed them as a heavenly snack throughout the day. Trust me, these bliss balls won't disappoint!
