Recipe Instructions
2/3 cups water
1/3 cup chickpea flour (besan flour)
1 tbsp gound flax seeds
1 tbsp nutritional yeast (optional)
1/2 tsp baking powder
1/4 tsp black salt (optional but adds egg flavor)
1/4 tsp white pepper
1/8 tsp turmeric
1/8 tsp celtic sea salt
1/2 tsp garlic powder
1/8 tsp chili flakes (optional)
In a mixing bowl, combine water, chickpea flour, ground flax seeds, nutritional yeast (if using), baking powder, black salt (if using), white pepper, turmeric, Celtic sea salt, garlic powder, and chili flakes (if using). Stir well until all the ingredients are fully combined.
Let the mixture sit for 5-10 minutes to allow the flax seeds to bind the ingredients together.
Heat a non-stick frying pan over medium heat.
Pour the omelette mixture into the pan and spread it evenly to form a thin circular shape.
Place lid on pan and cook the omelette until the edges start to firm up and small bubbles appear on the surface.
Carefully flip the omelette using a spatula and cook on the other side.
Once cooked to your desired texture, transfer the omelette to a plate and fold it in half or into a roll.
Serve the vegan chickpea omelette hot with your favorite fillings such as sautéed vegetables, vegan cheese, or fresh herbs.
I can't rave enough about this vegan chickpea omelette! As someone who loves traditional egg omelettes, I was skeptical at first, but this plant-based alternative exceeded my expectations. It's a fantastic option that perfectly mimics the flavors and textures of a traditional omelette while being packed with plant-based goodness. Every bite is a delightful combination of savory flavors and a satisfying texture that leaves me feeling nourished and energized.
